History Abastur



Abastur

It is the largest and important exhibition of Latin America for the restaurant and hospitality industry. The word "Abastur" means Tourism Providers.
It is an event that has a lot of publicity at the enterprise level, but access is restricted to students in middle and access costs for students are high.



In 1986, started this competition, where companies involved in the hotel offer products and their technologies.

Within Abastur formats were created for professional competitions. The onset of these was in 1996 with the name "The chef stop" now, the name is "Latin American Maya Pastry Competition"

There are several competitions within the exhibition "Latin American Culinary Azteca", "Mexica Cocktail Competition," Competition Olmec sculptures of ice, "" tlaxcalli Baking Contest. "
But I will focus more in the "Maya Pastry Latin American"

From 1996 to 1997, the competition consisted of carrying chocolate and sugar sculptures and elaborates just for exhibition. Until 1998 foreigners could participate, in 1999 this was no longer allowed, unless they have Mexican nationality.
From 1998 to 2004 was given a change to the format of the competitions as reflected in duration of 4 hrs, in which teams were of 2 persons and the sculptures were made during that time.

In 2005 and 2006 sugar sculptures were made since the contest was called "The best chocolate in Mexico," the process of this competition consisted of presenting 1schocolat sculpture and sweets, the team was of 2 persons.The winner the first year was the Presidente InterContinental Hotel represented by Chef Alberto Aguilar, and the second year was Fidel Baeza.

In 2007 had produced the first National representation format, which was satisfied by teams of 3 persons, with duration of 10 hrs, 1 Sugar and chocolat sculpture, 1 cake and 2 chocolates. The first winner was the Presidente InterContinental Hotel represented by Aron Santana and Sylvain Bortolini.


The first selection of Mexico to its representation in France in the World Pastry Cup was formed by a merger in the first place (Presidente Intercontinental Hotel) and second (Four Seasons Hotel) where participants were Aron Santana Alejandro Diaz and Francisco Vázquez.

In 2008, they were the Mexican selection in the first Latin American competition, organized by Gabriel Paillasson, president of the federation of the World Cup of Pastry. The countries that qualified for the World Cup that year were Brazil in the first place Mexico as the second and at third place Argentina.


For 2009 in the National competition involving 9 selections and places first to third awards were as follows, Four Seasons Hotel, Presidente InterContinental Hotel and Tout Chocolat.


In September of 2010 was the second Latin American heat. The representative of Mexico was by the Four Seasons Hotel, winning for the first time the event in first place.
The Mexico team is made up of Victor Rivera, Oswaldo Tapia and Alejandro Diaz.





This year Gabriel Paillasson awarded 5 passes for the World Cup of  Pastry, involving 9 countries, 1° Mexico, 2°Brazil , 3 ° Argentina,4°Uruguay,5°Colombia.
